Popcorn Pop
Leo loved movie nights, especially when his family made fresh popcorn. But one evening, as he watched the kernels burst into fluffy white clouds in the microwave, he wondered something he'd never thought about before. Why does popcorn pop?
His teacher, Dr. Maria Chen, was a food scientist who loved answering curious questions. When Leo asked her the next day at school, her eyes lit up with excitement. "That's a fantastic question, Leo! The answer is all about what's hidden inside each kernel."
Dr. Chen held up a popcorn kernel for the class to see. "This small, hard seed contains three important parts: the outer shell called the hull, a starchy center, and a tiny droplet of water trapped inside."
When you heat a popcorn kernel, something amazing happens inside. The water droplet begins to heat up and turn into steam, which is water in its gas form. As the temperature rises to about 180 degrees Celsius (356 degrees Fahrenheit), the steam builds up tremendous pressure inside the kernel.
But not all corn can pop. Dr. Chen explained that popcorn is a special variety of corn called Zea mays everta. "Regular sweet corn you eat on the cob won't pop because it has a different hull that's not strong enough to build up pressure," she said.
Dr. Chen told Leo about ancient peoples in the Americas who discovered popcorn long before Europeans arrived. "In Peru, archaeologists found popcorn that's over 6,000 years old!" She introduced Leo to the story of Tlaloc, representing the indigenous farmers who first cultivated popcorn.
Popcorn became especially popular during the Great Depression in the 1930s. Because it was inexpensive to produce, families could afford this tasty snack even when money was tight. Movie theaters started selling popcorn, creating the tradition Leo enjoyed today.
That evening, when Leo made popcorn with his family, he listened carefully to each pop. He imagined the tiny water droplets turning to steam, the pressure building, and the starchy center bursting free.
